Asado Chicken and Sauteed Lemon Zucchini

For the Asado Chicken:

4 chicken thighs (bone-in, skin-on)

1/4 cup olive oil

4 cloves garlic, minced

2 tablespoons soy sauce

1 tablespoon white vinegar

1 tablespoon Worcestershire sauce

2 tablespoons brown sugar

1 teaspoon smoked paprika

1 teaspoon ground cumin

1 teaspoon black pepper

Salt to taste

Fresh cilantro (for garnish)

For the Sautéed Lemon Zucchini:

2 medium zucchinis, sliced into half-moons

1 tablespoon olive oil

2 cloves garlic, minced

Juice and zest of 1 lemon

Salt and pepper to taste

Fresh parsley for garnish

Instructions
 

Marinate the Chicken:

    - In a bowl, whisk together the olive oil, minced garlic, soy sauce, white vinegar, Worcestershire sauce, brown sugar, smoked paprika, ground cumin, black pepper, and salt.

      - Add the chicken thighs to the marinade, ensuring they are fully coated. Cover and refrigerate for at least 1 hour (up to overnight for maximum flavor).

        Cook the Chicken:

          - Preheat your grill or oven to 375°F (190°C).

            - Remove the chicken from the marinade, reserving the marinade for basting.

              - Grill the chicken for about 6-7 minutes on each side, basting occasionally with the reserved marinade until cooked through and juices run clear (internal temperature should reach 165°F/75°C).

                - Alternatively, roast in the oven on a baking sheet for 30-35 minutes, basting halfway through.

                  Prepare the Zucchini:

                    - While the chicken is cooking, heat olive oil in a large skillet over medium heat.

                      - Add the minced garlic and sauté for about 30 seconds until fragrant.

                        - Add the sliced zucchini and cook for 5-6 minutes until tender and slightly golden.

                          - Stir in the lemon juice, lemon zest, and season with salt and pepper. Cook for an additional 1-2 minutes to combine.

                            Serve:

                              - Once the chicken is done, let it rest for a few minutes before serving.

                                - Plate the Asado chicken alongside the sautéed lemon zucchini and garnish both dishes with fresh cilantro and parsley.
