Apple Fritter Bites

2 medium-sized apples (preferably Granny Smith or Honeycrisp), peeled, cored, and diced

1 cup all-purpose flour

1/2 cup granulated sugar

1/2 teaspoon baking powder

1/2 teaspoon ground cinnamon

1/4 teaspoon salt

1/4 cup milk

1 large egg

1 teaspoon vanilla extract

Oil for frying (vegetable or canola)

Powdered sugar for dusting (optional)

Instructions
 

Start by preparing the apples. Peel, core, and dice them into small chunks. Set aside in a bowl.

    In a large mixing bowl, combine the flour, granulated sugar, baking powder, ground cinnamon, and salt. Mix until evenly combined.

      In a separate bowl, whisk together the milk, egg, and vanilla extract until well blended.

        Gradually pour the wet ingredients into the dry ingredients, stirring gently until just combined. The batter should be thick but pourable; if too thick, add a splash more milk.

          Fold in the diced apples until they're evenly coated with the batter.

            In a deep skillet or pot, heat about 2 inches of oil over medium heat (around 350°F/175°C).

              Once the oil is hot, use a spoon or small ice cream scoop to drop spoonfuls of the apple-batter mixture into the hot oil, being careful not to overcrowd the pot. Fry for about 2-3 minutes on each side or until they turn golden brown and puffed up.

                Use a slotted spoon to remove the fritter bites from the oil and drain on paper towels.

                  If desired, dust warm fritter bites with powdered sugar before serving for extra sweetness.
